BASIC VANILLA SPONGE CAKE


Ingredients:

  • Egg- 4

  • All Purpose Flour- 1 cup (250 gm)

  • Powdered Sugar- 3/4 cup (200 gm)

  • Butter- 225 gm

  • Vanilla Essence- 1 tsp

  • Baking Powder- 1 1/2 tsp

  • Milk- 1/2 cup

Method:

  • Preheat oven at 180° C.

  • Grease a 8" cake tin with butter and dust with all purpose flour and keep aside.

  • In a dry clean bowl, beat egg and vanilla essence till it become thick, fluffy, foamy and light yellow mixture.

  • In another bowl, beat butter and powdered sugar together till it is fluffy and pale in colour.

  • Sieve all purpose flour and baking powder together and add gradually in the butter , sugar mixture along with beaten egg mixture. Mix them together using cut and fold method. Add milk gradually and mix (till batter becomes "soft dropping consistency" ).

  • Now mix the batter gently (don't over mix ) with the help of beater.

  • Pour the batter in the prepared cake tin. Tap the cake tin , 4-5 times to remove air bubble.

  • Bake the cake batter in preheated oven for 30-35 min.

  • To check it is cooked, a tooth pick ,pricked in the cake should come out neatly.

  • When it is done, remove it from oven and let it cool before turning upside down.

This basic cake batter can be used for variety of treats and puddings, including cupcakes, and chocolate cake.
